As June approaches, our lovely rose bushes have been blooming with a wide range of colors and varieties.  Nothing adds more beauty to a wedding event than flowers, plants and trees.

We were pleased to host the Brides for Brides Engagement Photo Sessions on Saturday, May 22. You could not find a more lovely setting for photographs than the lovely grounds of Poco Diablo Resort.

Sara Cruz-Mora and Tamara Acuna, owners and photographers with Brides for Brides Photography, hosted the event. Amazing make-overs were created by Heather with Pure Radiance.

Decor for the hospitality suite was provided by Amy Mills with Bliss Extraordinary Floral. Bridal couples were able to view floral bouquets designed by Amy and her staff at Bliss. There was also a lovely floral centerpiece containing lovely colors and a variety of flowers.

Guests enjoyed a delicious chocolate mousse cake created by Donna Joy with Sedona Sweet Arts. The cake was a big hit and everyone loved it! What a special treat for our bridal couples.

Taysha Metzger and Steven McKnight are planning their wedding at Poco Diablo Resort for July 25, 2010. This special date is Steven’s 21st birthday and they are counting on a great celebration.

Earlier this week Taysha and Steven came into the resort for their menu tasting. Chef Felipe prepared a delicious meal for them that included the following dinner entrees:

Chicken Diablo with Roasted Red Pepper Sauce served with Scalloped Potatoes 

Grilled Salmon with Caper Lemon Sauce served with Saffron Risotto 

Roasted Pork Tenderloin with Anjou Chile Sauce served with a Potato

Medallions of Beef with Wild Mushroom Demiglace served with Guajillo Chili Mashed Potatoes

The food was a big hit with Taysha and Steven. Especially because Steven is a chef himself and his taste buds were savoring the delicious flavors that each entree presented.

We are so excited to be hosting their wedding. Taysha works with children in a day care center in preparation for her plans to attend medical school. Steven enjoys creating amazing meals at a facility in Flagstaff, Arizona. Both of them are full of excitement and looking forward to their wedding.

Our Chef Felipe is a talented chef with more than 25 years experience. Much of his training took place in his native Mazatlan, Mexico, where he discovered his passion for French Cuisine. He also worked in Sedona at the Enchantment Resort and Los Abrigados Resort. We are so lucky to have Filipe here at Poco Diablo Resort. He is passionate about his food and especially the presentation and taste. That is very important to him. You will enjoy all the meals created by Chef Felipe and his staff.

Poco Diablo Resort hosted participants of the Cannonball Charity Run for lunch in the T-Carls Restaurant. 

Attendees enjoyed a road run from Phoenix through Payson and Sedona to historic Route 66 in Flagstaff. The event is named after the 1976 film starring David Carradine.

The event started at the Radisson Fort McDowell on Friday night where race participants and attendees enjoyed music and celebrated in a party atmosphere.

The spree itself includes a scavenger hunt, trivia, a costume contest and more. There are 75 cars signed up for the rally and there will be even more cars to ogle at the starting line. Attendants can expect to see a couple of Lamborghini Murcielagos, old Corvettes, supped up Porsches and Audis and more.  Proceeds benefit Operation Homefront of Arizona that helps support military families.
