Saturday, August 28, 2010.  The weather in Sedona can be unpredictable at this time of year.  There was a time when August was not a popular month for weddings in Northern Arizona. That is all changing as each year, we are witnessing more and more August Weddings.  Shalane and Lee picked the perfect day for their Sedona wedding.  We experienced thunderstorms throughout the night but the skies cleared up and you would not have found a more lovely evening for an outdoor wedding.  The temperatures were cooler than normal and there was a very pleasant breeze flowing throughout the area. Lee and Shalane surely deserved the perfect wedding day.  They are one of the cutest couples around. Poco Diablo Resort was excited to host their wedding.

Kate Freeman with Dream Weddings of Sedona performed the lovely wedding ceremony at the entrance to the Golf Course Gazebo in front of 80 of Lee and Shalane’s friends and family members. Oman Ken played his magical harp and the mood was captivating. Shalane looked so elegant in her amazing wedding gown – Lee looked on with so much love in his eyes. It was the perfect intimate wedding ceremony.

Following the ceremony, guests proceeded to the Canopy Patio where a delicious buffet was waiting for them.  We offered southwestern speciality entrees and Mark had the bar all set up and ready to go.  Our servers of the evening were Javier – our PM Banquet Captain, Carol, Dario and Tiffany.

The tables were decorated by Nikki Sullivan, mother of the groom, and her helpers. The flowers were pretty and the colors were just what the couple wished for.

The spectacular wedding cake was created by Donna Joy with Sedona Sweet Arts. The lovely hand made sugar flowers were colorful and original – every detail was perfect. Music was provided by Elijah Smith, Spin Master with DJ E-3-ZEE. Guests enjoyed the music and danced up a storm following dinner. The professional photographer capturing the special memories of the wedding was Christin Terrin, Remembered Forever Creations and Photography.

Our special thanks to Lee and Shalane and their entire family for allowing us to host their wedding.  We wish them the best of luck throughout their married life together.

Saturday, August 21, 2010.  One of our favorite couples, Beth Johnson and John Dirk, held their wedding reception at Poco Diablo Resort in Sedona.  They met while at the naval academy in Aannapolis.  Just weeks before their wedding, Beth took the Bar Exam in preparation for a civilian law practice. Their traditional military wedding ceremony was performed by John’s father at the nearby Sedona United Methodist Church

Following the ceremony, guests arrived at Poco Diablo Resort around 5:00pm and enjoyed cocktails and appetizers on the Rose Terrace. Friends and family members enjoyed music performed by String Serenade, a classical and contemporary musical quartet.

The bridal party stopped off at one of Sedona’s most lovely areas, Cathedral Rock, for wedding portraits.  Their professional wedding photographer, Pamela Duffy, and her assistant, captured our lovely couple within the beauty of the surrounding area. The climb up Cathedral Rock was well worth the labor as the view was spectacular.

Dinner began at 6:15pm with a flavorsome salad followed by guest’s choice of plated entrée. Just before the main course was served, a Champagne Toast was made to the happy couple. Chef Felipe prepared Pepper Crusted Tenderloin of Beef with Roquefort Cream and Cabernet Sauvignon Jus and also Grilled Salmon Filet served with Lemon sauce. The lovely floral centerpieces and bridal bouquet were arranged by Amy Mills with Bliss Extraordinary Floral.  There was a threat of rain in the evening, but it did not damper the festive activities of the wedding reception.  Following dinner, guests danced to music performed by The Hamptons lead by Dan Crawford. Their list of music included “Crazy in Love” and “What I Like About You”.  They got everyone up and dancing and it was great fun for all.

We thoroughly enjoyed hosting the wedding of Beth and John Dirk and wish them the best in their married life. John will be off to Japan next year and Beth plans to practice law. They are a very gifted and thoughtful couple.

Saturday, August 14, 2010.  Sarah Keiper and Justin Venables held their wedding ceremony and reception at Poco Diablo Resort on a perfect Sedona day. Justin is in the Air Force and had just returned home from Japan for his August wedding. Sarah was so excited to have him home, as you can imagine.

The ceremony took place on our lovely golf course beneath a majestic weeping willow tree.  Kate Freeman with Dream Weddings of Sedona performed the intimate ceremony.

Following the ceremony, guests headed to the Canopy Patio for the wedding reception. Greeting Sarah and Justin’s guests were George Tole and his son George with AZ Photo Fun. Saturday, August 7, 2010.  We were so happy to invite Janelle McFeeters and John Saari to Poco Diablo for their culinary tasting in our T-Carls Restaurant.  In spite of the wet weather, they were able to finalize their wedding plans with us.  We will be hosting their lovely wedding at the resort on Saturday, October 9, 2010 – a very busy weekend for many of us here in Sedona.

Janelle and John wanted to offer their guests a dinner duet entree so our menu choices appealed to them.  Chef Felipe prepared the following dinner for Janelle and John:

Diablo Stuffed Chicken Breast, filled with Boursin cheese, baby spinach and sundried tomatoes. The entree was topped with a roasted red pepper sauce and served with our trademark garlic mashed potatoes and seasonal vegetables.

The second entree was our Grilled Filet of Salmon topped with our Caper Lemon Sauce.  Sampling another starch, scalloped potatoes was served with a fresh vegetable medley. Needless to say, our bridal couple enjoyed the delicious meal and found the perfect plated dinner for their wedding guests.

John and Janelle enjoyed the playful antics of our two frogs located in the Rose Terrace Fountain. They sure enjoyed the rain and it showed. Everyone enjoys the rain in the high country desert.  Many people know, Sedona is one of the most beautiful parts of our country.  You won’t find a more beautiful location for a wedding and Poco Diablo is the place for your destination wedding. Thank you Janelle and John for choosing us! We look forward to hosting your wedding in October.
